Harvested in late autumn, just before the first frost, only the smallest and ripest fruits are chosen. The pears undergo a traditional process of steaming and drying several times to preserve their natural flavours and nutrients. Once the ideal moisture level is reached, they are roasted in an iron cauldron, developing a deep sweetness and rich texture. A final drying locks in the concentrated aromas and ensures long preservation.
The result is a soothing, full-bodied brew with gentle sweetness and a deep, nutty pear character.
